Every June in Vermont, garlic farmers end up with an abundance of garlic scapes. These curly green shoots are the flower stem of the garlic plant and have a bright, fresh garlic flavor that’s too good to waste. So we turn them into a sauce! Scape Sauce is a vibrant green sauce made with loads of fresh garlic scapes, blended with vinegar and salt to let that unique garlicky flavor shine. It’s savory, tangy, and packed with garlicky goodness without any heat at all. Think of it as the hot sauce for people who don’t necessarily want heat but still want big flavor. It’s fantastic on eggs, roasted vegetables, grilled chicken, sandwiches, pasta, and just about anything that loves garlic. And if you’re a garlic person, well… this one is going to make you very happy.
