About this sauce
While Thai chiles are usually ripened to red, we wanted to make a green sauce in the HOT category that still had great flavor. Thai chiles are used green in several types of cuisine, and after a few trials, we felt it had enough heat and flavor to use in the green state.Taking a nod from those dishes, we chose pineapple juice to pair with the sharp taste of the Thai chile.The result is a velvety-smooth sauce that punches you in the mouth! This is the only sauce Pa Tilley eats!
