Despite not being named Paul, my best friend since the summer of ’95 is nicknamed Pauly. (The 90’s were a weird time.) Anyway, he and I have been friends for more than three decades now, but aside from his wedding and the birth of his kids, I don’t think I’ve ever seen him as happy as when I told him I was going to start pickling the “extra” banana peppers from my garden. The smile stretched from ear to ear, as he happily volunteered to be the first taste tester. "Pauly Prefers Pickled Peppers" was born more out of necessity than desire, but like so many great creations, it was something of a happy accident. In the summer of 2018, I had an absolute bumper crop of banana peppers, so many that I couldn’t use them fast enough to make my mild sauce, so rather than waste hundreds of pounds of tasty peppers, I started working on the perfect pickling solutions for everyone. In the end, I was able to settle on a sweet and mild version of my brine, and created some of the best pickled peppers I’ve ever eaten (if I do say so myself). This is the kind of thing that I make sure to keep a jar of in the fridge at all times, because you never know when the sandwich mood is going to strike. Many of the peppers are grown organically in the garden, then hand-curated to select only the best peppers to be added to the blend of spices before it is cooked, bottled, sealed, and shipped. The jars will last up to two months once opened and refrigerated, but once you try it, I'm confident that it will be empty long before that expiration date.
